Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1/2 cup blackened seasoning
  • 1/4 cup butter, divided use
  • 4 hoagie buns
  • Creamy Coleslaw

for Cajun Mayo

  • 1/4 cup mayonnaise
  • 1 tablespoon Blackened Seasoning

Instructions

  1. Toss shrimp with olive oil and 1/4 cup blackened seasoning.
  2. Heat a large skillet on the grill or stovetop. Add 2 tablespoons of butter and shrimp.
  3. Cook for 8-10 minutes until shrimp is pink and curled.
  4. Remove from heat.
  5. Butter hoagie buns with remaining butter and toast lightly.
  6. Mix mayo and blackened seasoning together.
  7. Spread mayo on buns if desired, top with creamy coleslaw and blackened shrimp.
  8. Serve immediately.
