TRUTH: as a child (and like most children), I despised Brussel sprouts. Swore that the minute I was old enough to cook my own meals, I would not let a sprout near these lips. Growing up, we didn’t have a pet that I would secretly toss unwanted brussels sprouts to under the table when the adults weren’t looking. No, I sat there, grumbled, and ate all the sprouts.

And as an adult, I now not only choose to eat brussels sprouts, but I also prepare them in a variety of ways. I’ll admit, sometimes, I douse them in a honey garlic sauce, and other times, I cover them in a way-too-generous sprinkle of pecorino cheese and make Cacio e Pepe Brussels sprouts!

I recently purchased an air fryer(affiliate link)when it was on sale, and I can’t say enough about it. Cacio e pepebrussels sprouts were the first thing to come out of my air fryer. I made them one evening to serve alongside a balsamic chicken recipe that I’m testing and I can’t tell you how good they get in just 10 minutes of air frying.

What is cacio e pepe?

Cacio e pepe is a Roman pasta covered in a creamy black pepper and cheese sauce made with starchy pasta water – it’s way more delicious than I make it sound. Consider it the Roman version of our American macaroni and cheese.

Homemade cacio e pepe Brussels sprouts are basically like swapping out pasta and putting crispy, crunchy, sprouts in its place. A lot lower in the carbohydrate department than consuming pasta, and these sprouts really do taste so cheesy and delicious.

What ingredients do you need to make cacio e pepe Brussels sprouts?

The ingredient list is quite short on this one!

  • Brussels sprouts
  • Salted butter: add a small pinch of salt if you have unsalted
  • Garlic powder
  • Freshly cracked black pepper: freshly cracked gives off the best flavor and smell
  • Grated pecorino Romano cheese

What if I don’t have any pecorino roman cheese, is there a substitute?

You can swap the pecorino Romano cheese for grated/shredded parmesan cheese, and that will work in a pinch!

How to prepare fresh brussels sprouts:

  1. First, give the sprouts a proper washing under cold running water. Then, drain and dry them on a dishtowel or with paper towels. You want to make sure to dry them well so that they brown and crisp up.
  2. Then, trim off the woody end and remove any loose outer leaves that aren’t entirely intact. Cut the Brussels sprouts in half lengthwise and set them aside until you’re done with all of them.

To make prep work faster, you can purchase the kind that are already trimmed and cut in half in the refrigerated section of your grocery store.

Would frozen brussels sprouts work for this cacio e pepe recipe?

Unfortunately, frozen brussels sprouts won’t work too well for this recipe. They retain a lot of water and won’t roast up in the air fryer/oven the way we need them to for this recipe.

FAQs

Why did my brussel sprouts burn in the air fryer? ›

Why did my brussels sprouts burn in the air fryer? If you don't shake the air fryer basket throughout the cooking process, you risk the sprouts burning before they are fully cooked. Can I air fry brussels sprouts without oil? While air-frying sprouts without oil will cook them, they won't be soft in the middle.

Why won't my brussel sprouts get crispy? ›

If you want your roasted Brussels sprouts to be seriously crispy, you need to crank up the heat. Roasting at a low temperature won't allow them to brown properly, so you want to get that oven nice and hot before tossing in your baking sheet. Follow this tip: Roast Brussels sprouts at a minimum of 400°F.

When should you not use brussel sprouts? ›

Throw out fresh brussel sprouts that have a foul odor, yellow or wilted leaves, a mushy or slimy texture, or dark spots. Use fresh brussel sprouts within 1–2 weeks of getting them. Store the brussel sprouts in a plastic bag inside your fridge, and wash them before cooking them.

Why do you soak brussel sprouts before cooking? ›

The soak time tenderizes the sprouts so the middles are softer. Don't worry, they won't be soggy! I would never do that to you. If, like me, you don't mind some chew to your sprouts, you don't need to soak the Brussels sprouts prior to cooking.

Can you put foil in an air fryer? ›

The great news about air fryers is that you can use foil along with parchment paper to cook your food in an air fryer. Just remember that if it's safe and effective to use in a conventional oven, it will work just fine in an air fryer.

Is it better to parboil brussel sprouts before roasting? ›

Unlike other vegetables, Brussels sprouts can be parboiled (even a day ahead) to reduce the roasting time without hurting their texture. That means the sprouts can be popped in the oven while the meat is resting before carving. Of course, if the main course is grilled or pan-cooked, the oven will be free for roasting.

Why do my brussel sprouts get mushy in the oven? ›

Moisture is the enemy of crispiness.

There's nothing wrong with soft and chewy Brussels, but if your goal is the type of crispy Brussels that they're serving at your favorite bistro you MUST thoroughly dry the surface of the sprouts before sautéing and/or roasting them. If they are wet they will steam instead of crisp.

Should you parboil brussel sprouts before frying? ›

Parboiling Brussels sprouts before frying is a good technique to ensure they cook evenly and become tender on the inside while allowing for a crispy exterior when fried. However, it's not always necessary but we think it works here to create a soft middle and crisp exterior in the pan.

Why are my roasted brussel sprouts tough? ›

Like soggy steamed Brussels, Brussels sprouts that are dry and chewy are no good either. This could be caused by using too little oil for roasting. You need a nice coating of oil—enough to make the heads shiny or if they're cut, enough oil to get inside the folds of some of the leaves.

What is the black stuff on brussel sprouts? ›

Alternaria Leaf Spot and Blackleg are the fungal party crashers ruining your Brussels sprouts' vibe. These fungi love a moist environment and will exploit any weakness in your plants, be it a tiny wound or just the plant's natural openings.

Do I need to wash my brussel sprouts before cooking? ›

Rinse under cold running water to remove any dust or dirt. Use a small knife to remove the sprout tip, and then remove any leaves that have bad spots. Raw: Slice thinly and toss with other shredded vegetables like cabbage, carrots, or beets.

What do you soak brussel sprouts in? ›

The steam can help to ensure the cooking is even throughout the Brussels sprout. For best results, soak your Brussels sprouts in salt water. Not only does salt act to tenderize the dense sprouts, but it will also help to season them all the way through.

How do you keep brussel sprouts from burning? ›

Don't Overcook. Overcooked Brussels sprouts can burn, so be sure to keep an eye on them and toss them partway through baking. Rotating the pan 180°F halfway through will also help them cook evenly.

How do you keep vegetables from burning in an air fryer? ›

Use a bit of oil to prevent the onion chunks from burning (each layer of onion is quite thin, so they burn easily). Simply toss the onion chunks in a small amount of oil then air fry in a single layer at 375°F (190°C) for about 10 minutes.

Why do my vegetables burn in the air fryer? ›

The foods are too light

“So something lightweight like spinach, as it starts to fry, ends up getting up in the heating coil—and then it burns, setting off the smoke alarm.”

Why does everything burn in Airfryer? ›

Burning food

When using an air fryer, you need to know how long it will take for your food to cook. Leaving it in for just a bit too long can cause it to start to get a bit too crispy or even burn.
