Frequently Asked Questions

What Is A Crustless Quiche?

A crustless quiche is a little like an oven baked omelette or a frittata. It’s made with a couple of eggs, a little cream or milk, and then whatever ingredients you like to add in.
There’s no crust involved which makes for an easy meal to prepare.
An interesting thing happens when a crustless quiche is baked in the oven, a sort of “natural” crust forms along the bottom and the sides. This leaves you with the absolute best part of the quiche.
A mini crustless quiche makes a delightful dinner or even a low carb breakfast. They can be low carb, keto friendly and low calorie as well.

Can You Freeze A Crustless Quiche?

Yes, a crustless quiche freezes very well.
To freeze before baking:
Mix the ingredients together and pour the mixture into a zip-top freezer bag. Thaw the quiche filling in the refrigerator for about 24 hours before baking. Transfer the ingredients to an small oven safe baking dish and bake as the quiche recipe states.
To freeze after baking:
Cook the quiche as directed and allow to cool. Tightly cover with plastic wrap and freeze. When you are ready to reheat the quiche, place the quiche in a 350 degree F oven and heat for 20 minutes.

What Type Of Milk Should I Use In A Crustless Quiche Recipe?

In the quiche recipes above, I recommend using heavy cream (also known as double cream). The cream makes the quiche richer.
You may also use skim, lowfat, or whole milk instead of the cream. Almond milk and soy milk will work well too.

How To Store A Crustless Quiche?

Cover the quiche and keep in the refrigerator. It should be eaten within 3 days.

FAQs

Why is my crustless quiche soggy? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.

What is the formula for quiche? ›

Ratios: The best way to make a quiche is to add the eggs to a large measuring cup, then add the cream or milk. For every egg used you should add enough milk or cream to create a 1/2 cup. Meaning for 1 egg you will add enough cream or milk to make 1/2 a cup of mixture.

Is milk better than heavy cream in quiche? ›

Heavy Cream and Milk – For the best tasting quiche, use a combination of whole milk and heavy cream. (Or simply use half-and-half.) Using just heavy cream produces an overly thick filling. Whole milk is great, but a combo of heavy cream and milk is better.

What is the difference between a quiche and a crustless quiche? ›

Crustless quiche is similar to a traditional quiche where it has savory egg custard loaded with cheese and mix-ins, but it's baked without a pie crust. It's the easygoing egg bake answer to practically every breakfast problem I've ever seen.

Can you put too many eggs in a quiche? ›

The key to getting your quiche just right is the custard, and this means having the correct milk to egg ratio. It's essential to have just enough eggs to set the dairy, but not so many that the quiche becomes rubbery.

What is the milk to egg ratio for quiche? ›

The key to a foolproof quiche is the ratio of eggs to liquid – 2:1. I used 3 eggs and 1 1/2 cups liquid ( a mix of whole milk and heavy cream) – this is enough for a deep dish crust. This is definitely a recipe to have in your repertoire.

How many eggs equal 1 cup? ›

One cup is roughly equivalent to: Six small eggs. Five medium eggs. Five large eggs.

What is the best cheese to use for quiche? ›

You can use any shredded cheese you like; one winning combination is havarti, colby, and Parmesan. Quiche is an excellent choice for any meal, including a busy weeknight dinner. It can even be prepared in advance and refrigerated or frozen, then quickly reheated.

Can I substitute Greek yogurt for heavy cream in quiche? ›

If you're low on dairy ingredients, don't fret. Greek yogurt can substitute milk, sour cream and heavy cream. Milk: If you're short on milk, half and half or light cream, Greek yogurt can be used to make up for the difference.

What is a substitute for heavy cream in a quiche recipe? ›

To replace 1 cup (237 mL) of heavy cream in your recipe, add 2 tablespoons (19 grams) of cornstarch to 1 cup (237 mL) of milk and stir, allowing the mixture to thicken. You can use whole milk or opt for skim milk to help slash the calories and fat content of your recipe.

Why is my quiche not fluffy? ›

The best quiche consists of a custard that's the perfect ratio between eggs and milk. Using too many eggs in the custard results in a quiche that rubbery and too firm when baked, while not using enough will prevent the custard from setting. Follow This Tip: Remember this ratio: 1 large egg to 1/2 cup of dairy.

What Italian egg dish is similar to a crustless quiche? ›

A frittata is an Italian egg dish like an omelet or quiche but lazy and forgiving. It's lazy because the recipe is easy, and you don't have to do the tricky omelet fold. It's also forgiving since you don't have to make a crust, and it uses no cream or milk, unlike an omelet or quiche.

Should quiche be cooked at 350 or 375? ›

BAKE in center of 375°F oven until center is almost set but jiggles slightly when dish is gently shaken and knife inserted near center comes out clean, 30 to 40 minutes.

What is another name for a crustless quiche? ›

WHAT IS A FRITTATA? Frittatas are Italian in origin and can be described as a cross between an omelet and a crustless quiche. Frittatas take less time to make than quiche or strata.

Why does my quiche always have a soggy bottom? ›

Wet pie fillings + raw dough are a tricky combination. If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.

Why is my quiche mushy? ›

Using fillings that are too wet

If you are finding yourself with soggy quiche, it may not be an issue with your crust or a matter of under-baking. Using vegetables with too much water will lead to a soggy quiche. Avoid waterlogged vegetables in your filling.

How do you firm up a quiche? ›

Simply put, eggs do the thickening and cream creates richness. I use a ratio of 1 egg to 1/3 cup of cream to get a firm quiche with a lot of flavor. Make sure that whatever you're adding to the filling (veggies in particular) is free of any excess liquids.

Why is my homemade quiche watery? ›

Excess moisture is one reason why quiches collapse in a watery pool on your plate. Vegetables and meats like ham give off tremendous amounts of water when they're cooked. Therefore, if you're using vegetables in your quiche, it's imperative that you cook them first.
