What Are Cheese Straws?

Cheese straws are made with puff pastry, cut into thin strips and twisted into straws.

Whether you call them cheese straws or cheese twists the method remains the same. Twisted into long spiral ‘straw-like’ sticks, they mimic the look of straws and are flavoured with delicious cheese.

Which Cheese Is Best To Use?

I love using mature cheddar cheese when making cheese straws, it provides the best flavour and I always have some around! If you like strong cheese flavours, then you can go for extra mature cheddar cheese or mild cheddar for less of an intense taste.

Of course, you can make homemade cheese straws using an entirely different cheese. Parmesan, Red Leicester and Gouda are all great hard cheeses to try.

What Is The Best Puff Pastry To Buy?

I like to use this pastry from Jus Rol. Make sure the readymade pastry you use is pre-rolled for the perfect even texture.

Recipe Ingredients

Below are four simple ingredients needed to make cheese straws:

  • Puff pastry – This recipe uses readymade puff pastry, perfectly buttery, flaky and crispy.
  • Cheddar cheese – Classic yummy cheddar cheese filling.
  • Egg – For the egg wash, simply beat the egg and brush it over the pastry.
  • Black pepper – For a little extra depth and flavour.

How To Make Puff Pastry Cheese Straws (Cheese Twists)

Making cheese straws are quite simple and easy yet look very impressive! You don’t even have to make your own puff pastry, using ready-made puff pastry cuts time and guarantees perfection.

It’s really important that you leave your puff pastry to thaw for about 10 minutes before you start. Simply take it out the fridge and leave to rest at room temperature.

Can You Freeze Cheese Straws?

Yes, you can freeze them! Which is why they make great meal prep freezer snacks. You’ll have to freeze them before you cook them.

Once the puff pastry is filled with cheese, sliced and twisted, simply cover them with another layer of parchment paper. Put them in the freezer for around 3 to 4 hours or until hard and firm. Once firm, place them in a freezer safe bag or container. All you have to do when you’re ready is take them out of the freezer and bake!

Cheese Twist Variations

There are lots of ways that you can experiment with this cheese twists recipe.

  • Cheese – You can replace the cheddar cheese with another type of cheese like parmesan or mozzarella. You could try a combination of your favourite cheeses.
  • Add More Filling – You can add bacon strips to this recipe or spread some pesto or mustard over the pastry. Instead of black pepper you can try oregano.
  • Change the size to change the texture! – If you’ve ever wondered ‘why are my cheese straws not crispy?’, have you ever tried changing the size? The thinner the strips you cut the crisper they become. If you want your cheese straws less crispy then increase the size.

My Top Tips

Don’t skip egg washing the pastry before you place it into the oven. Egg washing creates a beautifully golden brown and shiny appearance which makes the cheese twists look so tasty.

The longer you bake the pastry the crispier they become. If you like soft cheese straws, then bake until starting to brown. If you like your cheese twists really crispy, then bake until golden brown and the pastry texture is very flaky.

I like to use a pizza cutter when slicing strips from the pastry, it makes the process so much easier and creates straight and clean-cut lines. You can use a knife too, but make sure it’s sharp to avoid tugging the pastry and stretching it out.

The cheese twists in this recipe are quite long, if you want to make them smaller or into bite-sized pieces it’s quite simple. Once the pastry is twisted, use a sharp knife to cut the pastry into smaller sizes, egg wash the pastry then bake in the oven.

FAQs

Why are my cheese straws not crispy? ›

It can be hard to tell when cheese straws are perfectly baked, but underbaking can lead to soft straws instead of crisp ones.

How long do cheese straws last? ›

Cheese straws are best the first day or two after they are made, but will stay fresh in an airtight container on the counter for about 1 week. You can also freeze any uneaten cheese straws in an airtight container for up to 2 months.

How do you use a cookie press for cheese straws? ›

For straws: Place the dough into a cookie press or pastry bag fitted with a star tip. Push the dough into one corner of the bag and press the air out. Snip the tip and pipe them into 3” long strips about 2 inches apart. Bake for 10-12 minutes or until lightly browned on the bottom and edges.

Why are my cheese straws soft? ›

Bake until browning.

To ensure the straws are crispy, bake them until you see them browning on the bottom. Otherwise, the straws will get soft when storing and even have a taste of flour.

How do you make cheese more elastic? ›

Make sure that you use a high quality cheese. Bagged Kraft isn't high enough quality and won't provide stretch. Go for something you have to shred yourself and get the full-fat version of it. Make sure to shred it into fairly large pieces - the smaller your cheese shreds, the more likely they are to burn or brown.

How do you keep cheese straws crisp? ›

Stored in an airtight container, baked cheese straws will last up to 1 week. Unbaked dough can be stored in the fridge for 1 week or frozen for up to 1 month. To crisp up stored cheese straws that have gone slightly stale, bake them in a 350° oven for 3 to 4 minutes, keeping an eye on them to make sure they don't burn.

What country did cheese straws originate from? ›

Cheese straws are a traditional food of England and the Southern United States. They are eaten as an appetizer or snack. They are made as cut strips, or by using a cookie press, from dough made with butter, flour, salt, cheddar cheese and cayenne pepper.

How do you refresh cheese straws? ›

Cheese straws are easy to make ahead. You can either complete the recipe to serve up to a day ahead and serve at room temperature, or make the cheese straws up to two days ahead and refresh them on baking trays in a hot oven for 5min to crisp up again (a trick which works for refreshing stale/softened cheese straws).

Do cheese straws go bad? ›

Most recipes make it a point to share that these treats can be kept for up to a week, when sealed in an airtight container.

Should cheese straws be refrigerated? ›

Serve at room temperature. Cheese straws will keep in the refrigerator, in a sealed container, for two days. They will not last an hour at a party.

What do you eat with cheese straws? ›

Cheese straws are one of those classic Southern treats, something that no self-respecting hostess would be without in her culinary repertoire. They are usually served before a meal, though they are also delicious with soups, salads, wine, cheese and I have even been known to dip cheese straws into a bowl of queso.

What kind of press do you use for cheese straws? ›

Fill a cookie press with the dough according to the manufacturer's instructions and fit with the star-shaped disk. Holding the cookie press at an angle on an ungreased or Silpat-lined cookie sheet, press the trigger twice, dragging the press away to make straws 3 inches long.

Can you freeze home made cheese straws? ›

Bake and cool as directed. Freeze baked cheese straws or rounds in a heavy-duty zip-top plastic freezer bag up to 3 months. Let thaw at room temperature 30 minutes before serving.

How do you serve cheese straws at a party? ›

Cheese straws are really an equal-opportunity appetizer. They go just as well with a glass of wine or a pint of beer. They can stand on their own (literally — you can serve them standing in a pretty cup!), but they're also great as part of a spread with things like pickles, deviled eggs, dips, and other nibbles.

Why are my cheese crisps not crispy? ›

If you find your cheese crisps are soggy once they've cooled, you likely didn't bake them enough. The edges should be brown before they are removed from the oven. Alternatively, you may have used a soft cheese that won't harden properly when it cools.

Why are cheese sticks rubbery? ›

If your mozzarella sticks are rubbery it's probably because they are starting to cool down. Once the cheese melts and then starts to recongeal, the mozzarella sticks can get rubbery instead of stretchy and molten.

What makes some cheese crunchy? ›

In cheeses like Cheddars, those crunchy bits are more commonly calcium lactate. This is where lactic acid and calcium combine to form calcium lactate crystals. Whilst this crystalline texture is not historically found in cheddars, there has definitely been a rise in its popularity.

Why is string cheese rubbery? ›

You might be surprised to learn that the cheese making process is the key factor in the creation of your favorite stringy cheese. The stringiness of string cheese is naturally created by the cheese being stretched and pulled by an auger while simultaneously being heated to 140 degrees.
