How to Effectively Seal a Hand Pie?
Hand pies are so easy to make, but I understand if you are a bit worried about one thing: sealing them. Who would want to waste any of those precious delectable fillings, right?
When sealing a hand pie, make sure to remember these steps:
- Ensure that you spare at least 1/4 inch of crust around the filling.
- Prepare an egg wash (an egg whipped with a teaspoon of water) to brush the edges with before sealing.
- If you are making a half-moon-shaped hand pie, fold the crust and press the edges together with your fingers. For other shaped hand pies, put another dough on top of your first dough with filling and press the edges with your finger as well.
- Get a fork and use its tines to mend the edges together and finish the seal for a stronger hold.
- Put the hand pies on a sheet pan and freeze them for ten minutes before baking.
