Slow Cooker Tips & Tricks

Let’s just have a little talk about our slow cookers here for a minute. . .

As most of you know I’m a graduate of the Culinary School and one of the classes that’s required is Sanitation and Safety. During this class we had an eye-opening chat about slow cookers and how they can be the perfect breeding ground for bacteria and pathogens.

  • If not careful they can be the perfect breeding ground for bacteria and pathogens.
  • Preheat your crock pot just like you preheat your oven so plug it in and turn it to the high setting to get it nice and hot from the start for cooking. After all there is only one little probe heating the whole slow cooker!
  • Add everything into the crock pot as warmed up as it can be, to cut down on the getting-the-food-hot portion of cooking, this is where you need to be cautious and make sure it is all hot and up to cooking temperature in 2-3 hours.

  • If food stays between 41 degrees and 135 degrees for 4 hours, then it has to be thrown out because the bacteria and pathogens have had much too much time to grow and a food borne illness is a likely result.
  • If you add meat; be sure it is thawed and NEVER added frozen, if it’s beef or pork brown it first.
  • Add liquids hot ie: like use HOT water or warm up any liquids in the microwave first then add them in already hot.
  • Spray the ceramic insert with cooking spray to make clean up a snap! It’ll wipe out with no sticking!

Slow Cookers are wonderful things and if we take a couple of quick precautions to keep food safe while using them… they are even better! 🙂

FAQs

Which potatoes hold up best in soup? ›

ANSWER: Waxy potatoes or those called boiling potatoes stand up well in soups and stews. These have thin skin and are high in moisture and low in starch. Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups.

What is the thickener in potato soup? ›

Cornstarch is not the only thickening agent you can use. Other alternatives include flour, arrowroot powder, instant mashed potatoes, or even pureed vegetables like cauliflower or cooked oats. Each of these options will add thickness to your soup while imparting its own unique taste and texture.

How do you keep potato soup from getting too thick? ›

Add more liquid: The simplest solution is to add more liquid, such as water, broth, or milk. Start by adding a small amount and gradually add more until you reach the desired consistency. Use a blender: If you have a blender, you can puree the soup in batches, adding more liquid as needed.

Will evaporated milk curdle in a slow cooker? ›

The evaporated status makes this type of dairy perfect for the slow cooker, as it won't curdle in the low heat. Added to the crock pot with the other soup ingredients, you can expect evaporated milk to both flavor and enrich your dish.

Should I boil potatoes before adding to soup? ›

There is no reason to stir the potatoes while they are boiling. peel them then boil them at the right boiling temp. Then when they are done boiling ( boil until soft ) cut them u and add them to your soup then add your seasonings then boom you have your soup.

What can I add to potato soup to add flavor? ›

Cheese: I recommend a good sharp cheddar cheese here for maximum flavor. Greek yogurt or sour cream: To make the soup extra-creamy. Salt and pepper: Add in as much as you need at the end to season your soup well.

What is the secret ingredient to thicken soup? ›

Add Flour Or Cornstarch

Instead, ladle a small amount of broth into a separate bowl and let it cool. Add a few tablespoons of flour or cornstarch to the bowl and whisk until it's blended smooth. Next, bring the soup to a simmer and add the mixture back to the pot. Pro tip: Don't dump in the entire mixture at once.

Why isn't my potato soup creamy? ›

One trick to make your potato soup a little less grainy is to add some form of dairy –- cream, milk, or even cheese. Because dairy is generally creamy in texture, that characteristic will carry over into your soup. Crisis averted.

Does cream cheese thicken potato soup? ›

It might be tempting to add sour cream or softened cream cheese to help thicken the soup, but these dairy products only work in certain circ*mstances. You must blend cream cheese or sour cream, either with an immersion blender or a full-size blender, for it to thicken a soup.

How do you doctor up bland potato soup? ›

Your potato soup is bland? Try adding a little more salt. That's usually the answer to any issue of blandness, no matter the recipe in question. A basic Appalachian style potato soup uses only a handful of simple ingredients, leaning on milk and water and often bouillon to create the brothy soup base.

What happens when you add evaporated milk to soup? ›

Evaporated milk gives body to smoothies, thickens up and sweetens coffee, and adds nuance and richness to creamy soups and chowders, not to mention savory sauces and even oatmeal. If you don't have much of a sweet tooth, you can also use it in place of sweetened condensed milk in plenty of desserts.

What happens if you put milk in a slow cooker? ›

Dairy. Prolonged cooking of dairy products causes them to separate. Adding milk, cream or yogurt to crockpots at the beginning of cooking is a sure-fire way to wind-up with a grainy, watery mess at the end. Stir it in once the recipe has finished cooking.

Why is my potato soup curdling? ›

Many recipes for potato soup call for at least one dairy ingredient to enhance the soup's flavor and texture, but this poses a problem: heat can easily curdle dairy. Curdling occurs when milk-based products are exposed to hot temperatures too quickly, causing the protein in the dairy to separate from the water.

Are russet or yellow potatoes better for soup? ›

Best Potatoes for Soup

To make a potato soup, using russets or all-purpose baking potatoes can be best as they are high in starch and low in moisture. When you use these in soups, they can soak up the liquid and lose their shape. This makes them ideal for a thick, creamy soup.

How do you keep potatoes from getting soft in soup? ›

Cut the potatoes into rissolettes and blanche them (i.e. cook them briefly, not to full doneness). Use the water you used in the soup and put the potatoes back in when you go to warm the soup again for serving. Since they're cut fairly small, they should be just about done without being mushy when you go to eat.

Why are my potatoes still hard in my soup? ›

Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes. Acidic Ingredients: If your soup contained highly acidic ingredients (e.g., tomatoes), it could have affected the texture of the potatoes.

Why aren't my potatoes getting soft in my potato soup? ›

Next time you find your spuds refusing to soften, whether simmered with tomatoes, cooked with a lemon marinade, or stewed in a vinegary sauce—it's probably not the potatoes at fault. Give them a par-boil in good old salted water first, before you dress them in that tart, mouth-puckering acid.
