My First of Many St. Patrick’s Day Dinners

Our family is German and Italian, and we never had a tradition of corned beef dinner. All the stories I’ve heard about making the perfect corned beef involved an extensive slow-cooking process. So I’ve never attempted to try making corned beef.

My first attempt was when I joined our church committee that put on a monthly potluck dinner. When it was time to plan for the March potluck we were all given a corned beef from Costco and asked to bring it cooked for the potluck main dish.I wasn’t sure what a German and Italian cook was to do.

Having little ones at home I did not have the time to baby a new recipe for hours. I turned to my trusty Instant Pot / Electric Pressure Cooker.

I was watching my favorite Chef Wolfgang Puck on HSN and he was presenting his Electric Pressure Cooker. I already had one but I love to watch him cook as I always get new ideas. He opened a lid and marveled at how quick and easy corned beef is to cook in the electric pressure cooker.

He was stressing that it only takes 90 minutes instead of hours. Wow, that was for me.This was my answer and I now make our corned beef and cabbage 3 or 4 times a year with this quick method.

How To Make Corned Beef In The Instant Pot / Electric Pressure Cooker

To make it even more simple I use 4 beef bouillon cubes in 4 cups of water I heat in the microwave. I add this to the pressure cooker with a small onion and 4 garlic cloves. Mix in the seasoning packet and place the whole 3 to 4-pound corned beef. Secure the lid and turn the level to seal. I put the dial on 90 minutes on high pressure with a 15-minute natural release.

I then take my time to cut up carrots, potatoes, and cabbage and keep them ready for when the meat is done. When the timer goes off after 90 minutes allow to natural release for 15 minutes. Remove the lid and take the corned beef out. I put mine in an ovenproof pan and covered it with foil. I then heated my oven to warm.

I then placed the carrots, potatoes, and cabbage in the liquid in the pressure cooker and cooked for 6 minutes after securing the lid again and setting the knob to seal. It was hard to believe but in 6 minutes the vegetable was cooked to perfection and dinner was ready. When the 6 minutes are up, do a fast release.

Ingredients

  • 3 to 4 Lb Corned Beef & Seasoning Packet
  • 4 Bouillon cubes
  • 4 cups of water
  • 1 Onion chopped
  • 4 Garlic Cloves
  • 6 small White or Red Potatoes cut in half
  • 45 Carrots cut into large sections
  • 1 large Head of Cabbage cut into wedges

Instructions

  1. Heat water and bouillon cubes in the microwave in order to dissolvethe bouillon.
  2. Add the beef bouillon water, onion, garlic, corned beef, and seasoning packet to the electric pressure cooker.
  3. Lock the pressure cooker lid in place and set the valve on the seal.
  4. Set the timer for 90 minutes.
  5. When the timer is done, let the pressure release on its own, for approximately 10 minutes.
  6. Remove the corned beef and cover with foil to keep warm, place in a warm oven.
  7. In the pressure cooker in the liquid that you cook the corned beef in, add the potatoes, carrots, and cabbage.
  8. Lock the lid, and set the timer for six minutes setting the valve at the seal.
  9. After the six-minute timer is done, release the steam, remove the lid, and enjoy your corn beef and cabbage
