Tomatillo Recipes with Chicken

When you look at the most commonly used ingredients in Mexican and Southwestern cuisine, a few foods stand out. Could you cook every dish with cumin, cilantro, tomatillos, avocados, and chicken, beef, or pork? Just add tortillas, cheese, and corn and call it a day? Of course, you would not, but these mainstays show up again and again.

Chicken, in particular, is easy to complement with vegetables and spices because its own flavor is unassuming. We all know how fancy chicken becomes in the hands of some Latin chefs. The relatively delicate meat of chicken lends itself well to soups and salads and blends remarkably well with citrus-based lemon and zesty tomatillos.

Canned Tomatillo Recipes

Sometimes you just have to put yumminess in a jar and seal it up. Canning does a good job of preserving tomatillos and salsas for months if the seal remains undisturbed. It is also good for areas where it may be difficult to locate tomatillos.

You can use two methods to preserve tomatillos. There are others, but I found these most useful and delicious. If you make a salsa, which you will probably use a lot of anyway, you can it for future enchiladas or Rellenos. You can also pickle them and jar them in a more direct manner.

A ripe tomatillo is bright green, fills the husk, feels firm but slightly soft when gently squeezed, and the husk may split or become papery. Are tomatillos hard on the stomach? ›

Tomatillos are generally not known to cause digestive problems, but they are new to your baby's system. Start with a small amount and increase gradually.

Are tomatillos an inflammatory food? ›

Is it OK to eat raw tomatillos? ›

Yes, raw tomatillos can be eaten. They have a tart and slightly sweet flavor and are often used in Mexican cuisine for making salsa verde. Raw tomatillos can be sliced or diced and added to salads, tacos, or used as a condiment. Some people also like to eat them whole, like a cherry tomato.

Why do you need two tomatillos? ›

You will need two or more tomatillo plants for the blooms to be pollinated and fruit to be produced. Plan for each plant to produce about a pound of fruit over the season. However, most recipes call for ½ pound to make a sauce, so plan to grow a minimum of 2 to 3 plants to have enough fruit ready to eat at one time.

Storing tomatillos: Tomatillos can be stored in their husks for 2 to 3 weeks in a paper bag in the refrigerator. Tomatillos can also be frozen. To freeze them, peel the husk, rinse and dry the fruit. Place them in one layer on a baking tray (optionally lined with parchment paper) until frozen.

Tomatillos can be kept in a paper bag in the fridge with the husks on for 1 to 2 weeks. If the fruit is kept in an airtight bag, it will spoil much faster, so keeping it in paper bags is essential.

Place tomatillos in a nonreactive saucepan with enough water to cover. Bring to a boil. Simmer until tomatillos soften and begin to burst, about 10 minutes. Drain tomatillos and place in a food processor or blender with onion, garlic, jalapeño peppers, cilantro, salt, and pepper.

First, preheat your oven to 400 degrees. Next, peel off the outer brown skin that wraps the tomatillos and discard. Rinse the tomatillos. Slice the tomatillos in half through the horizontal center (not up and down) and arrange on a large baking dish with the skin sides up.

Is it better to eat tomatillos raw or cooked? ›

You can eat tomatillos raw or cooked -- I prefer cooking them to tone down their distinctly sour flavor. The tomatillos you find at the supermarket are mostly imported from Mexico. You may be able find some at your local farmers' market from late July through September.

Are tomatillos safe to eat raw? ›

Tomatillos are usually cooked before they are eaten, but they can be consumed raw, so food safety is important. A few food safety concerns for tomatillos include possible soil contamination if the fruit falls off the plant, contamination where the husk splits, and soil splashing onto fruit during rainfall.
