Using vegan substitutes to replace butter and eggs, these brownies are decadent and sweet, the perfect dessert. SO MUCH CHOCOLATE! I hope you’re ready.

Tasty posted “How to Make the Best Brownies”, so in classic Edgy Veg fashion, I improved it by making them into the Best Vegan Brownies without the use of animal products. These tasty vegan brownies are easy to make, despite requiring 12 ingredients you probably already have at home.

Most ingredients from this recipe are already vegan! To make these tasty vegan brownies, I’ve replaces replaced the butter and made sure the chocolate is dairy-free, and using aquafaba in place of eggs. To have the perfect vegan brownies, we will be adding a little baking soda for the cakey lift.

We’ll be adding espresso powder to these chocolatey brownies. If you cannot find espresso powder, instant coffee will do. I recommend doubling the instant coffee to compensate for the strength of espresso flavour.

INSTRUCTIONS FOR THE BEST VEGAN BROWNIES

  1. Grease a 9×9-inch dark metal pan with softened vegan butter, then line with parchment paper, leaving an overhang on all sides.
  2. In a heatproof liquid measuring cup or medium bowl add the chocolate chips, ¼ cup cocoa powder, and espresso powder and set aside.
  3. In another heatproof bowl, add vegan butter and cook in the microwave until bubbling about 2 1/2 mins. Pour the hot vegan butter over the chocolate mixture and let sit for 2 minutes until the chocolate starts to melt.
  4. Whisk the mixture until it is completely smooth. Set aside.
  5. In a large bowl with a hand mixer or in the bowl of your stand mixer, combine the white sugar, brown sugar, vanilla extract, salt, and aquafaba and beat on high speed until light and fluffy, about 10 minutes. It will begin to look like a thick pancake batter.
  6. Position a rack in the middle of the oven and preheat to 350°F.
  7. Slowly drizzle in the chocolate mixture while beating the egg mixture, until smooth. Gently fold in the remaining cocoa powder, flour and baking soda until just combined.
  8. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  9. Bake for 20 mins, or until the brownie has lightly puffed on top.
  10. Remove the baking pan from the oven using oven mitts, and gently drop the brownies on a flat surface 1-2 times until the brownies deflate slightly.
  11. Sprinkle with flaky sea salt.
  12. Return the pan to the oven and bake until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges are cooked, roughly another about 20 minutes. The center of the brownies will seem under-baked but will continue to set as they cool. Leave the brownies in the pan and set on a cooling rack. Allow to cool completely.
  13. Lift the cooled brownies out of the pan and cut into squares. Serve on their own or with a dollop of vegan ice cream.
